Ingredients4 medium beets (boiled or roasted, peeled, and grated)
3 medium carrots (peeled and chopped/grated)
1 Medium/Large Onion
1 Large Clove Garlic
6 tbsp mayonnaise
1 tsp lemon juice (optional, for brightness)
2 tbsp fresh parsley(chopped)
2 tbsp dill
Salt & pepper to taste
Instructions
Cook the beets until tender (boil ~30–40 minutes or roast ~45 minutes). Let cool, peel, and chop into cubes(or grate).
Chop or Grate the carrots, onions and garlic and place them in a mixing bowl with the beets.
Add mayonnaise, lemon juice, herbs, salt, and pepper.
Mix well until evenly coated.
Chill for 15–20 minutes before serving for best flavor.
